The .50 Hawken in Jeremiah Johnson. Now, he wasn't a cowboy, but it was in the West and he killed lots of Injuns.
You bring up a point that has always bothered me. Seems many folks think the only people out west were cowboys. Having grown up out here I can tell you it ain't so. There were very few cowboys and it was a low paying job with little respect from the locals. People seem to forget who really civilized the west. It was the fur trappers, wagon freighters, brick makers, lumberjacks, sawmill workers, prospectors, construction workers of all kinds. Same as today. Living in cattle country, I know of a handful of cowboys only. I know more restaurant dishwashers. Since the subject title was old west movie firearms, my all time favorite was Death Hunt. Took place way out west in the Yukon, and based on the true story of Albert Johnson. That movie had a wide array of interesting firearms.
Bonanza began in 1860. I distinctly remember they had a show where the Civil War was about to erupt. Little Joe's mom was from the South and he supported the Rebels. Either Hoss or Adam I don't recall, liked the Yankees. So it seemed like there would be a Civil War in the Cartwright family.
Then, the show went on for about 11 years. So it was over by 1871. And yet, the only pistols the guys used were 1873 Colts. My family loved that show but not too accurate on the firearms.

And the rack of rifles along the wall in the living room were 1892 Winchesters.

Near the end of CrossFire Trail, Selleck uses an 1871 Open Top in his shootout with Dorn. When I did cowboy action shooting, I had 2 Cimarron Open Tops. Loved that model of revolver.
I love Colt SAAs and of course Winchesters. My favorite movie Winchester is the 1876 used by Steve McQueen in Tom Horn. Though I think the real Tom Horn used a 1894 Winchester a newer and off course superior rifle.
Figures don't lie, But Liars figure Assumption is the mother of mistakes
My 1891 Winchester model 1886. Was Originally a standard round barrel rifle in 45-90 WCF. It's now a 33 WCF. Don't own a real Colt SAA but I have a Cimarron 45 Colt 4 5/8" Evil Roy.

the 1895 Winchester in Dersu Uzala, even if it was an anachronism.
Anybody seen a Bisley Colt in a movie?
Or a Colt New Service?
I remember seeing a Bisley in an old 30’s western.
Dersu Uzala was soooo far west it was east again! (Freakin’ Awesome book too!).
Yeah Colonel Arsenev actually used a 98 Oberndorf Mauser sporter..
Was pretty cool of them to use the ‘95’s in the movie.
Dersu carried a " Berdanka!" 😊. Old Russian Berdan.
The made for TV Rough Riders is full of 1895’s!!!!!!
