Since the picnic ham thread got such good response, do these still exist?

No to the tenderizer. They were actually a pretty good cut. Richard, I remember them on the menu at the Steak House (later Christopher Jay's) in SL.

It's not a name you hear anymore, don't know why, they come from pretty far forward on the strip...think of the tough side of a t-bone with no tenderloin side attached. A good steak fairly well marbled and aged. I don't think that was a common name in retail meat cases. They used to come in 50# boxes for the commercial trade.
Well this is a fine pickle we're in, should'a listened to Joe McCarthy and George Orwell I guess.

We still get them at a local steak house that offers them at lunch. They are 10 oz. and I always assumed they were a cut of sirloin, but I really have no idea. They are really tasty though.
Know fat, know flavor. No fat, no flavor.
I tried going vegan, but then realized it was a big missed steak.
