I'm in Iowa as well, grill is covered in snow. Pan fry!
Try a breading mix of 60% flour and 40% white sugar. Add salt, pepper and some Tony Chachere's creole seasoning
Go an egg wash and bread once or twice, depending how thick you want the crust. Sugar might sound weird, but trust me the flavors come together well and the caramelization is to die for.
Fry in cast iron skillet with hot oil. Brown well, but do not overcook and make it tough.

It's GREAT wabigoon! Happened upon it by accident about 30 years ago.
Somehow, dumped sugar into the flour container as a refill. So they got mixed and I did not know it at the time! LOL
Wife asked, what did you do different on the chops tonight? They are delicious! Me - same as normal until I took a bite of mine. BEST fried pork chop ever.
Retraced my steps and figured out mixing flour and sugar. Been making them like that ever since. Seriously, give it a try and get back with me tomorrow!

Just did some, Seasoned, into the sous vide for 4 hours at 140. Seared for color/flavor

Had the best pork chops I've ever ate, at my Daughters house a few days ago.
She browned 'em, then sloooow cooked them in apple sauce. Yum Yum!

Flour dip, egg wash, panko crumbs with spices. Bake, then top with mushroom gravy. Breading and gravy go a long way to keeping things moist.

I like skillet fried or shake and bake style for most chops, much easier to control temp. Most over cook chops when grilling.

I like skillet fried or shake and bake style for most chops, much easier to control temp. Most over cook chops when grilling. Thats for sure. Tougher'n hell. Salt and pepper, fried in a black iron skillet is hard to beat.
