It took 4 of us this year to tap with 30+ inches of snow to go through but we got it done in 3 days. Had a little flow yesterday but not enough to think about messing with but verified everything is right. Hopefully have some syrup available in a couple weeks. We have a new to us filter press this year that'll filter the syrup beyond the filter system we was using. We also got a 2000 gallon stainless steel tanker from a milk truck for sap storage allowing us to have 3000 gallon storage now. We added on another 300 taps last fall also. Everything is on vacuum bringing the sap to the sugarhouse for us so no more hauling anything. Prices for syrup have gone up slightly as they raised flat rate prices again, the last time they increased we didn't change our price but now we have to, new syrup jug prices went up a little too. Made a little syrup and will start to bottle some up if our jugs ever show up from supplier, was suppose to be in mid January and now says later this week. If not we will be taking a little road trip, good time for it because isn't suppose to be out of the 20's until next week again. I remember there being amber and dark, etc. in the past. Then I think last year was the single offering. I’m not complaining, at all - they’ve all been amazing. If the sugar content comes up in our sap we could have some lighter grade but that is hard to say. Normally the sugar content at the beginning is up to 2% + and last year and this year so far has been reading 1.25%. The lower means it is boiling longer which makes for the darker color.

Old caps are discarded and replaced with a new one with new seal and lock ring. The inside of the jugs are coated with something(forget the word used)so they're non porous to eliminate bacteria. We keep the jug we use from in the fridge and any additional in the bottom of the chest freezer. Never had an issue with jugs cracking or breaking. Not sure if it freezes solid but it sure won't pour till it warms a bit.

If you forget to pull it from the freezer and wanted it soon you can warm it up quicker by putting the jug in hot water for a little while, may have to change water as it cools.

Shelf life unopened will last many years, can't really say just how many because I've never seen it go bad. Once open keep in fridge,will last years that way. If ya have more than 1 jug put the others in the freezer and it'll last forever. Syrup will not freeze cause of the sugar content and once brought up to room temperature it'll be just like it was to begin with. If ya ever have some that is opened and left out of fridge for a period of days and you notice it has what appears to be mold, although it isn't and is harmless but you want it gone just heat the syrup up to about 185-200 degrees and the stuff will float and ya just skim it off, rinse the jug and pour the syrup back in. At camp we have forgotten to put it away for near a week and it didn't change but was a cooler time of year, summer heat may be different.

So tonight I made some blackberry sauce from fresh picked blackberries from the yard, a bit of balsamic vinegar, white vinegar, a shake of clove, Blackberry wine made last year AND this here maple syrup instead of sugar ...to drizzle over some grilled MR venison backstrap...Wonderful stuff.... Holding onto anger is like drinking poison and expecting the other the person to die ......
