Do yall have any particular recipes that you use the trimmings for? Besides throwing some in baked beans, do you use it to add fat in venison or other uses?

Down here Kroger has whole brisket for a buck 99 a pound! Tomorrow I'm smoking two 1/3 brisket chunks, a venison roast, a couple of wood duck breast and some venison jalapeno sausage.

Cube it. Make a sauce with your favorite BBQ sauce, some brown sugar and a tablespoon or so of Worcestershire sauce. Mix it up then coat the cubes. Layer in a pan and bake at 300f until the sauce carmelizes.
Get out of peoples way.
