I hope everyone had a great Easter weekend. We were at da shack thinking about looking for turkeys but I had a few other things on my mind. The weather didn't really want to cooperate with us either so, I decided to play camp chef for the long weekend. Friday. Don't you boys worry. We damaged that 5# can of beans so bad that we needed another for Saturday night. We also had mustard potato salad from a deli for a side. Saturday. Smoked on a 6hr cycle with a little free help from Tag Alder smoke. Early in the morning I peeled the "skin" off the back side. Lightly coated in oil, mixed up my own rub mix with seasoning salt, onion powder, a tiny bit of Cyan, and plenty of brown sugar. Then I wrapped them in plastic wrap for 5 hours until it was time to fire up the smoker. I was hoping I wouldn't have to babysit the grill but with steady rain, keeping an even temp was a bit difficult. I eneded up having to sit there most of the time and play with the coals/air/smoke most of the day. No worries. The boys kept me hydrated. More beans and potato salad for sides. Easter Sunday Dinner. The star of the show was yesterday afternoon. A glazed ham on the grill. Jumpin' Jack Flash this summbitch was good. There was a sweet glaze on the ham already. I put some grape juice in the pan to keep it moist while on the grill. Covered the whole she-bang in tinfoil and let er rip. 350* was the plan. But again, the wind kept things sporty and it got hotter than I'd like. So it had to be babysat again to keep things from drying out. I put together a cheesy potato/sourcream hash brown dish to serve up on the side of this one. I don't have pics of that but it was dang good as well. Kennedy, my daughter made up the recipe for those and she nailed it! We ate like Kings. It was a great weekend.

Every time we do a ham, I ask myself, why don't we do this more often ! I do too man! It's soooo good. Plus, I get to take it for lunch because for some reason I always seem to accidentally buy one 2#'s bigger than we need.

I think anybody who posts pictures of food that looks that good to eat should be required to host a get together and feed us all

You all had ham for Easter. Coincidentally, I noticed several hams in our big freezer and asked if we could have one for diner Easter. Permission was granted and I began the picking process as to which one to have. I picked the smallest one since it was to be just the two of us. Man did I pick good. It was a Gwaltney spiral sliced ham. Mrs. Linda made her special deviled eggs and potato salad and pickled beets.. I must confess I was a glutton and it WAS good. I have a friend who night hunts private property for wild pigs and coyotes. He is good at it and is in demand by land owners and therefore gets a lot of night hunting in. He is a local mail carrier. A month or so ago he left a 175 pound boar at the processors in my name. We got lots of breakfast sausage ,chops and brisket from that one. Being a boar most of it went into sausage cause boar meat is strong. Last week he had a good night hunting killing six pigs and left a nice sized 75 pound sow for me. This one will be regular cut with ribs, hams, chops, loins, etc. His thermal imaging rifle scope also records and I have watched a bunch of his kills. He posts them on You Tube. Go to You Tube and search for "Mailman 29680". It is interesting to watch. One night last week , he and a fellow hunter killed six in one night. I don't know what the pig situation is up there but we are infested with feral hogs and I DO mean infested. There were three 200 pound plus ones killed on our deer lease last year during deer season. There is no season on them, of course, and night hunting is allowed. In fact that is when most of them are killed. The meat is good and very lean but the boars have a quite strong taste if they are large(older). It's always good to see all of your posts my friends.

In MN here, we don't have any feral hogs that I'm aware of. I'm curious how the smaller ones taste compared to a "normal" farm raised pig.

So you just announce when you will be there and ND does the rest? No, we just decide here when we want to go to ND's. Then we show up. Sometimes he's there and sometimes he's not. Doesn't matter, I'm sure there is stuff in the fridge and freezer we can eat. White Bear can come too. He brings smoked fish.

Rooster , the meat from a feral hog is very very lean and as I said before very tasty if it comes from a sow or smaller boar. It is quite a lot like commercial pig meat of course but their diet is completely different and less plentiful. The hunting of them is exciting.
