Friday night I made 4 smoked chicken cordon blues. Turned out pretty good. My wife and I made sandwiches with some Saturday. Today I had about half of one left. I made eggs Benedict with it. I baked pilsbury flakey grand biscuits. Cut them in half. Added a thin slice of the cordon blue. Then added a poached egg to each. Then poured Dijon holindaise over them.
I accidentally out did myself. Really enjoyed it.

I do know the pic rule. I am not very good at posting photos because I don't do it very often. But, if my photo shows up, this was my Friday night dinner. I did not think to take a picture of the Benedict concoction I made this morning. I didn't expect much of it.
