I am real tired of the small unit that I have, time to step up to a commercial unit. If you guys have one, I would greatly appreciate any input!

I just use the smoker. No experience with a dehydrator.

I have been running this one for about 2 years: https://www.amazon.com/dp/B076HFCW4R?tag=fooddehydratorblog-20While the name suggest "commercial" I'm not sure it actually is (or what you even mean when you say that term), but, it works great! It beats the chit out of the round-tray-stack plastic crap I ran forever, for sure. The heat comes from the back so all racks get heat evenly - minimal rotating and swapping places with trays. I can dehydrate 2 massive eye of rounds worth of jerky in ~8 hours, with minimal supervision.

If handling hundreds of lbs (commercial), I'd suggest a do it yourself fabrication if one has no intention of marketing his products.

Used a dehydrator for years, then got a bigger smoker and use it. Much better product from the smoker
