Like her, I do alot of things right handed but I shoot lefty. Its a curse. My vote would be a 243 just because it is a proven whitetail killer. I second the Tikka 243 or the savage storm that you mentioned.

FWIW one other option (the cheapo option) is the savage axis compact in 350 legend. I bought one myself in lefty because of how light it is (sub 7 lbs scoped much like your model seven). Recoil is so light I have let my 7 year old daughter shoot it. Plus when ammo is available (who knows when that'll be) there is some decent ammo at cheaper than 243 prices. Winchester claims it is deadly out to 250 yds.

I almost forgot about a rifle in my safe. It’s a CVA Scout in 6.5 CM. They are made in other calibers as well. Break open single shot with a stock that fits a righty or lefty. CVA also makes a compact stock for the Scout that is fairly inexpensive.
Take a look at them.

Another good choice. They make these in a compact version that I think has a 12.5" or 13" LOP. The compact comes in 243 or 7mm-08 if im not mistaken. Just go ahead and get her the CVA in 35 whelen lol jk

Not sure what chamberings are out there for lefty+youth rifles, but if the 6.5CM and 7mm-08 are available, I'd go that route and load them down. If not, the 243win will do the job and you can always screw on a take-off barrel in a different chambering later if you like.

Loading 6.5 CM down gets you 6.5G. 6.5G kicks less than 243 even while using 20 more grains of bullet than 243.

I may be biased toward 6.5G because of past success and the cases of ammo I bought for 25 cents per round.

The common parent cases which come out to truly low recoil include .223, 7.62x39 and 30/30. Truly low recoil at usual velocities for deer, with the limit of those case capacities, happens with 130gr or less bullets.
