Doing a feed for about 75 people next weekend for a benefit event. We feed the guests of honor and a few of our bigger donors the night before out big fundraising event. We already have fish fry (fresh walleye), fresh cut fries, ribs, pulled pork, and a few sides. Was thinking of doing some hush puppies to compliment everything since we already have several fryers going. BUT, I've never made them before. Didn't figure they could be too complicated, but figured I'd ask for some advise from folks that have adequate them before. Can I have the batter all mixed up ahead of time, or best to make it in small batches as I go?
