I'm wondering if it would be better to do it on a wired rack over a tray to let the grease drip and eliminate the need for turning. At first I thought it was a decorative thing but reading some of the reviews, people say it gives a crunchy on the outside, chewy on the inside texture to them, which sounds good to me.
