Good hash browned till it's a little crispy, sausage gravy, eggs on top..... My favorite (and my Doc's least) breakfast.... Nice piece of rye toast to scoop it all up...

We do a similar thing with hamburger gravy on mashed potatoes.


Salt pepper and garlic seasoning. Cook some onions when you brown the hamburger.

I have done the hamburger gravy over toast, almost a SOS type meal. The wife wont eat it but the kids like it.

Brown a pound of Gore’s (IMO the best I’ve had) sausage over medium heat, I has to make some grease but not too much like the cheap [bleep]. Sift in a 1/4 cup of flour and mix in well. Let that brown for 3-4 minutes. Dump in 1 can of condensed milk and 3 cups whole milk. Turn up heat to medium high and stir continuously with a wood ladel, make sure to keep scraping the bottom of the pan. Keep stirring continuously til it’s bubbling and starts to thicken, turn heat to medium low, shake in salt and lots of black pepper and keep stirring and scraping bottom of the skillet til it’s the right consistency, probably 5-10 minutes max. Total cook time, 20-25 minutes.
Serve over toast or biscuits (put them in the oven when you start). I like mine with over easy eggs.

If I use home made sausage I season with McCormick sausage and meatloaf seasoning. If it’s too lean I add a little crisco.
Make it every weekend.

My parents owned a restaurant in a small town when I was growing up. Mom would wake up at 4:30 every morning and open the restaurant.
All breakfast items were cooked from scratch. No Hardin Sysco products. Bisquits and sausage gravy made fresh every morning. I would get up and go to restaurant for breakfast before school and Mom would cook me whatever I asked for. Her sausage and biscuits were always my favorite. Dad is gone but Mom is still with me. She taught my Wife how to make the gravy the way I like it.
A cup of hot black coffee and a plate of bisquits and sausage gravy!!!

I have to go with sausage on the side too. Never saw anyone make sausage gravy the way everyone does now in my area until a restaurant chain Po Folks opened 40-45 years ago.

Use Lawry's seasoned salt instead of regular salt. A little goes a long way. Makes sense to season when the gravy is cooked to the consistently you like otherwise the seasoning will be light because milk is always being added.

I pan fry bacon pieces then remove the bacon. After cooking the sausage the gravy is made with the sausage in it. The bacon is added just before serving so it stays crisp.

I second the Lawy's seasoned salt, plus add a couple teaspoons of butter to the sausage and flour mixture for some extra richness..before the milk is added.

My mom used to make chipped beef gravy. After I left home I was stuck with the crappy frozen stuff, until I happened to look at the back of a pack of the beef and saw the dang recipe there! Now I use the same proportions of flour, fat, and milk for sausage too. It ain’t rocket science.

Either is good on waffles too.

I’ve found that the Pioneer Country Gravy Mix is pretty flippin’ good, especially peppered. Ladled over good sausage and good biscuits it’s a heckuva good meal.

For the full experience, I fortify the sausage grease with some bacon grease. Make your roux, and use 1/2 and 1/2.

Shawnee Mills (out of Oklahoma) makes a Peppered Country Gravy Mix that is pretty good too. Besides using these mixes with sausage and biscuits, it’s also very good ladled over chicken fried steak.

Made some this morning for 2 of the boys,made with venison Breakfast sausage..
No leftovers or pics,kids eat that like there's no tomorrow.
