I have to go with sausage on the side too. Never saw anyone make sausage gravy the way everyone does now in my area until a restaurant chain Po Folks opened 40-45 years ago.

Use Lawry's seasoned salt instead of regular salt. A little goes a long way. Makes sense to season when the gravy is cooked to the consistently you like otherwise the seasoning will be light because milk is always being added.

I pan fry bacon pieces then remove the bacon. After cooking the sausage the gravy is made with the sausage in it. The bacon is added just before serving so it stays crisp.


My biggest fear is when I die my wife will sell my guns for what I told her they cost.

I second the Lawy's seasoned salt, plus add a couple teaspoons of butter to the sausage and flour mixture for some extra richness..before the milk is added.

My mom used to make chipped beef gravy. After I left home I was stuck with the crappy frozen stuff, until I happened to look at the back of a pack of the beef and saw the dang recipe there! Now I use the same proportions of flour, fat, and milk for sausage too. It ain’t rocket science.

Either is good on waffles too.

I’ve found that the Pioneer Country Gravy Mix is pretty flippin’ good, especially peppered. Ladled over good sausage and good biscuits it’s a heckuva good meal.

Mix is crap and it tastes so much better made from scratch. It really is easy to make.

For the full experience, I fortify the sausage grease with some bacon grease. Make your roux, and use 1/2 and 1/2.

Shawnee Mills (out of Oklahoma) makes a Peppered Country Gravy Mix that is pretty good too. Besides using these mixes with sausage and biscuits, it’s also very good ladled over chicken fried steak.

Made some this morning for 2 of the boys,made with venison Breakfast sausage..
No leftovers or pics,kids eat that like there's no tomorrow.
