Is there a law or some design feature that says that all problems with air conditioning units will occur on weekends on days where it is expected to be over 100 degrees?

The “law” - is called heat load……
A house itself is a heat sink… it absorbs heat, and you have to cool it down …
When it’s cool at night - the house cools down, when it’s hot it stays hot…
The best thing you can do with a system that is struggling is to cool the house down at night so the system doesn’t have twice the load during the day

In this dry climate, it's typically 30F cooler at night than it will be the next day. We open the windows at night and turn on some fans to cool the house down below 70. When it gets above 70 the next morning, we shut all the windows and close the curtains on the sunny side. Usually it'll stay below 75 until mid afternoon. Our a/c is only about 3 years old and so far it's never broken down. There will come a time, of course, when it will fail but hopefully I'll be dead and gone by then.

Oh, it’s not struggling. It’s one of two units and they don’t struggle no matter how hot it gets. No, it chose this morning to get a small pin hole in a coil and lose all the freon. So, luckily for me we have the other unit and it will soldier on until they can come out and do a full leak check and get it fixed. We will stay out of that side of the house for a or two.

When it is blistering hot, we all work the crap out of our AC unit. The best thing you can do it keep condenser coil clean and lube motor if applicable. Make sure full of refrigerant. Preventive maintenance goes a very long way. I go on service call and see coil so closed up and filthy. Would you drive your auto with cardboard in front of radiator in 100 degree days. Same thing. If it is mechanical it wll break down sometime. You can extend life by many years with good maintenance. Good luck

Not a law, but a likelihood that equipment will fail when strained. Weekend or weekday doesn't matter, but it sucks more when it happens on a weekend, both for you and the guy who is on call.
