... chops, rib eyes: I know that I am once again displaying my ignorance, but when did they become such a big thing? More importantly, whyinhell do people pay the exorbitant price that meat commands for bone?

Go buy boneless pork chops, and bone in.
Same thickness. Cook the same way. Same time.
DONT OVERCOOK.

Eat one of each, alternating bites.

Now, you can tell us.

The tomahawk thing?
It's just trendy aesthetic BS.

Some are offended by the looks of the tail, and
the fat. So they end up paying a bunch more for the butcher to
take a few seconds to cut it off. Then he sells it in burger, or stew.
Not a bad deal for the butcher. He basically sells that meat twice!

I personally enjoy the chunk they cut off.

Often don't need a pork chop at supper.
3 females here won't "eat" the bone, so they hack off the meat
I get the bone.

I laugh at people who think buying bone, overall, is stupid.
A guy a work will not buy whole chicken wings.
He is offended by paying for the tip. Which gets tossed.
WTF? Too stupid to understand you either buy it, or pay for
cutting it off? And pay more per pound to compensate for its weight?

Boneless meat is about lazy American people, convience in the supply chain,
And safety and simplicity in the retail shop.

It is not about supplying a better, more flavorful product.

Favorite cut of meat, but the big bone is worthless

That tail is where the flavor is, pork or beef.

As is the case with all things fire, we seem to have moved away from the question of excessive (as opposed to "some") bone sticking off cuts of meat.

That is exactly how my son ate his, Steak in one hand by the bone and a beer in the other hand, wish I would have taken a pic. It was damn funny watching him and he ate the whole thing.

They’re good, but no better than any bone in rib-eye. The plus about a tomahawk is that they’re usually the correct thickness a ribeye should be

The bone is superfluous, but it's fun.
