I have seen them but I cant say I ever cooked one up.

The ones I can grab at the grocery store are just thick cut sections of a boston butt which to me means low temp and time. I smoke them like I would a rack of ribs looking for tenderness and they turn out great.

They are more tender than you would think.
Hogs are killed young and tender.

Flour, S&P, garlic..... coat them, fry.



When we raised hogs, we let em grow up.
400#+. 50 pound hams weren't unknown.
Some of our shoulders we had seen into steaks.
At home, we boned them and ran them through a commercial
tenderizer. Then packed and froze.

After the tenderizer, they were like eating pork chops.
But more flavor, maybe more tender.

My mom use to make them in a glass baking dish. A little veg. oil, seasoning, quartered potatoes with paprika, and carrots. Boy I haven’t had that in a long time.
