Pretty easy. Get the shrimp and chicken how you like it. Add tomato juice, clam juice cocktail, avocados, cucumbers, tomatoes, red onion, cilantro, lemon juice, sriracha, salt, and pepper (I use red and black) to taste. I generally make two - one with a lot of sriracha and red pepper and one with just a touch. If you're going to travel with it as I often do, leftover chinese takeout containers tend to seal better than most and if you toss the container for whatever reason, the Mrs. doesn't seem to mind too much.

Sorry, but that it not gazpacho. The real stuff does not contain shrimp or any kind of meat. Here's a representative recipe: LINK

Maybe confused ceviche for gazpacho? You would have to be a brave soul to make ceviche with chicken. And you better have a real good toilet!!!

this is the recipe I have been using for about 30 years. I served this in my last restaurant Quart of V-8 Juice One large cucumber, quartered, seeded, diced Third cup chopped cilantro Third cup chopped parsley 4 stalks celery, with tops, diced Fine diced red bell pepper Several diced scallion tops 2 cans Hunts Diced tomatoes Two large tomatoes, seeded, course diced Two ounces of Vermouth Two ounces best quality olive oil. Juice of one large lemon Salt, pepper to taste One fine diced Serrano pepper, if wanted, omit if not wanted
Place all ingredients in a large bowl. Use an immersion blender to get the consistency you want. Mix all well, adjust seasonings Chill well; serve with a Tbls or more of sour cream
