I'm looking into purchasing a few carbon steel skillets for my adult children and one for myself. Any real world recommendations on a good brand to buy?

I can't help with shopping for new, but I got one from a buddy, he was feeding his goddam dog out of it, it is kinda like them old "Cool Handle" sheet metal pans. This one is about twice as thick, it's not handle heavy, stamped logo on the handle says "Savory Spider". Anyway I was sanding it to clean it up and noticed how hard it was. Metal working emery cloth barely scratched it...I assume a very high carbon steel. After seasoning it I am using it now to the exclusion of all the other pans we have. It is absolutely non stick bulletproof. I have a dandy set of brand name cast iron from before the war, and it is not half as good. I've been watching Ebay and they are running 50 to 75 bucks...ouch.


Well this is a fine pickle we're in, should'a listened to Joe McCarthy and George Orwell I guess.

The cooktop on my Camp Chef flattop is like glass. Thats steel, not cast iron.


They must take a hell of a good season.

we could add a stamping line

I need to look into these.
My wife can't use most of our cast ones anymore.
If she has to hold them up to scrape a sauce out, they are too heavy.
I even find the big ones a bit much to one hand and hold.

well they are NOT the same, and don't cook the same. Cast iron takes longer to heat up and to lose that heat. Blue steel pans take some getting used to. They can be very 'non stick' if seasoned and used correctly, but they can burn the hell out of your food if you are not careful. I prefer cast iron, but in camp over an open fire, those steel skillets are time savers.

Electric flat surface stove .... i have one, a matfer, and it warps slightly when i heat it up. I know....i want gas too...but haven't gotten there yet. Or did i do something wrong?

Cast iron and light frying pan are two very different tools. I have a couple of these for stir fry, omelets, etc. Upside over nonstick, they can go in the oven.
