A/17/4 at Ft Knox Ky, basic training I did about an hours worth of KP on a drum potato peeler. Didn't much enjoy the food in basic, but then we didn't spend much time eating.
Ft McLellan Al the food was some better.

But my unit mess hall on Ft bragg...
It wasn't so great the first winter I was there, but in the spring we got a new mess sergeant. Master Sergeant Caine. The man knew his way around food service and took real pride in his job. I'd rate him as a master chef.

And he had a staff that he mentored. One guy in particular stood out. MSGT Caine initiated 24 hour mess for the battalion, and PFC Steinmetz from NYC volunteered for it regularly. That guy knew how to feed people who came off an op in the middle of the night.

Our field chow, when we had it, came from various units we operated with. Always better than nothing, but on the odd occasion when it came from our mess it was usually pretty good stuff.

No argument from me. Chow at Osan was first rate. Only time I had better was when I did two three month TDYs at Koon-ni gunnery range. The had rations for 250 people and 90 percent of the time one other guy and I were the only ones there. Literally ate steak three times a day properly cooked by the Korean hired as cook and houseboy. We had a few other interesting fringe benefits not normally found in any military installations but I'm not telling.
While at Lackland I got stuck on KP for a week. Did it at the chow hall for the female trainees so we always tried to get on the serving line if possible.
Worst chow hall was at Nellis. The had civilian contract KPs, the only military people were IIRC the CO and a sergeant. AFAIK, they were both ROAD. Food was so bad I refused to eat and literally went on a hunger strike. CO was pizzed and ordered to to go to the chow hall and eat. I refused. So he said we'll both go and eat. He ggot the same garbage are we enlisted troops got. Took one bite, picked up his tray and said follow me. We went straight to the base commander's office and presented our complaint. The next day there was a new CO and mess sergeant and the KPs were all GIs, not a civilian in sight. Food was also a hell of a lot better. Our weather detachment was quite small and we weren't very popular for a while but at least we all ate better.
I even remember my first meal at Lackland. We arrived at an oddball hour and had missed lunch as we were enroute. They whipped up something fast. SOS. My first thought was who puked on my toast. I wasn't bad and over time I grew to like like it. Those were the days, from 1960 to 1964.

Kinda long story.
We had company cooks from the dfac with Mkt,s/mobile kitchen trailers assigned to us in the 502nd during live fire manuver and shoot house ranges.
T rats canned boil in water stuff mostly.
Soup, hot water, coffee in containers.
Ater about the 3rd day of no hot water or coffee in the containers at whatever AM prior to starting a day.
I went and spoke with Bob our PFC cook.
Young black kid from alabama.
Hot liquid issue solved.
It's your job discussion with him.
In a nice roundabout manner cause you dont wanta alienate a cook.
The incentive was Bob do you wanta do some day time blank and live fires with us as a rifleman.
Yep he did.
The bone thrown his way worked.

Bob in the chow hall was a disaster
Eggs over easy or medium
Broke yoke city each time all the time everytime.
They moved Bob to omlets eventually
Earthquake broken open omlets all the time.
Bob got moved to the prep area cutting up fruit and veggies.
You would see Bob in the back from the serving line at times.

One night I had Brigade staff duty NCOIC

In comes walking Ltc Hickman my Battalion commander
Very respected knowledge officer
Dressed in basically maimi vice like suit.
Never seen him in civies before.
Swear ta God i could hear kettle drums playing🥴🥴🥴
Call attention
He does the at ease carry on.
Talking with him
Boring night not a weekend nothing happening in barracks or off post concerning the unit.

Why ya in hear at 830 in the evening sir???

I'm buying Bobs computer off him.
He put a ad on Bn Hq board.

Thinking to myself.
Ltc hickman is buying a puter off Bob???
Hickman is like one of the most intelligent officers I have ever served under and Bob is dumber than a tree stump as a cook.

In comes Bob
With a equipment wagon thing and his computer system.
Him and Ltc Hickman go into the conference room.

Man.... the tech speak that went down between those 2 and all the mods Bob did to his system he spoke of and the back and forth between those 2
Blew me and my 2 runners away.
It was like 2 Bill Gates talking puter speak and code to each other and dreaming of inventions to be done with completely and thorough understanding of each other.
Like MIT computer scientist stuff.

LTC Hickman rolls on out with cargo wagon and puter.
Bob counting money on way out.

Bob shoulda became a puter type in the army.
I talked to him later on about it all in the DFAC about why he was a cook and told him I was a recruiter for 3 yrs prior to coming back to the 101.
He had the hands on working knowledge, experience, and ability.
Had the tech data down, basically a subject matter expert IMO.

But not the asvab line scores to get those types of jobs.
Kid joined the army on his 2nd intetest being a cook.
He wasn't a very good cook🤦‍♂️🤦‍♂️🤦‍♂️🥴🥴🙂😄😄😄
Bob was pretty legendary in Brigade based on his "cooking skills"
Not malicious like, but more like thats our Bob type of way...

Only thing I can add is that we had the best food in the Navy.. Under way, we had a full meal ready every four hours..... and were welcome to make our own in-between times if necessary, just clean up when done.. I think I gained about 30# the first month I was on board.....damn -hadda make an effort to NOT eat! laugh When I finally got qualified (earned the Dolphin pin) I was doing 'below-decks' watches in port.. I loved the 4-8 hitch.. Ole would be fryin' up a batch of sausage links by 4:00 am... I'd grab a bowl, fill it with links, take my clipboard and do my rounds while chowin' down on those links..

We'd have fresh trout or pork chops for breakfast.. Eggs any way you'd want 'em.. A pallet of pails of ice cream and fresh pies would be on the pier early.. Never had to ask sailors twice to lend a hand.. laugh

I should have stayed in for another six.. Still regret that at times..

Red Cross call stuff.
Hauled off from training on Snake River plains area for 6 or 7 hrs.
That place sucks the root in March....

I dont think that was pentagon and local area pork for AF type prima donna,s in the 80,s at all.

you sure that was chow hall and not nco club or something? never heard of waitresses in AF chow halls and i been in quite a few. never know i guess. maybe they brought out the special treatment for you guys.

DFAC man.
All ranks in the place.
Wasn't a EM or NCO club
Line to get in the place.
They all had their version of meal card and married on sep rats paid to eat.
PSG and My Sqd ldr had to pay .
They did some in "leiu of" paper work for me.
I had a Army meal card.
No go with the AF.😄😄😄

In Germany in 87ish.
2 AF guys Semi truck they were logistic supply cats.
1 a e5 other a e3.
Truck broke down Autobahn near Panzer.
Issues with repairing it out of AF maint system till monday when a maint truck could arrive.
We had a Army Support Bn on our Kaserne
Had same vehicles in Direct Support shop.

They spent the weekend in our barracks
Had their own room just like the rest of us.
Partied with us up in Stuttgart Fri and Sat
Cool guys.
Talkng with em.
AF and Army stuff.
Mech Infantry sounded great to em🤦‍♂️🤦‍♂️🤦‍♂️
Said their job in logistic supply was boring.
Make rank time versus army .
That raised their eyebrows
They was gonna get a substandard Quarters allowance for the 3 days they lived in our barracks.
That kinda raised our eyebrows.

It was all good..


We had nice barracks.
Each room own schitter and shower.
We didnt have kitchenettes is what it was they said.

after basic and AIT, I was assigned to Madigan AMC at Ft Lewis, one of the Armys 10 Medical Centers....

as staff you eat in the Hospital Cafeteria.... you couldn't buy meals at any price at any restaurant in Tacoma, liked they served all day every day there.

also because of our medical status, we could eat at any chow hall on base....

there was one chow hall that operated for those that worked the night shifts on base...

Those of us on student status still were having a big test the next day, and we studied as a group right thru dinner time...
so the only place to eat was that all night chow hall. We were out standing in line, with every one else and talking over Anatomy and Physiology, for our test the next day.

We didn't notice that every one else near us in line, either kept way in front of us, or far behind us... we couldn't figure that one out.. figured it must be they thought we had B.). or something.... finally out came the Mess Sgt, some E8... yelling NO NO NO...he comes up to us and tells us we never have to stand in line... please follow him " Sirs"...

so we do so, and he takes us by the chow line, and then if we see nothing we like, in the back he has roast beef, steaks and even some seafood... lobster, scallops, carb etc.

He escorts all the way to our table with our food..... Sirs, when you ever come by again, go right to the front door and come on in.. and just get in line, you don't have to have an ID card or anything.... my staff will remember you, as I will make sure they do....

it finally dawned on us.... out there talking all of that A&P, everyone thought we were doctors....

We never said anything any different the next 18 months we were there..... I ate better in the Army than I have ever eaten in my life... even to this day...
