Trim them. Smoke them, confit, enjoy. They are better than brisket.
Use the trimmings for barbacoa. Sammiches, tacos, burritos, nachos, etc.

Can’t get anything like that at any of the meat depts in stores here.
They are akin to radio stations that only play suckass stevie nicks, eagles and bon jovi and 10 other lame ‘artists’ on a boring rotation

Barbacoa tacos with cilantro and onion are to die for. Dayum skippy..... personally i put some finely chopped serrano peppers on mine, but cilantro and onion are a must.
