An old jokester codger neighbor I use to know back in my youth claimed back when he was kid the grownups always ate first and kids ate last. He said when they had fried chicken the only pieces left for the kids to eat was the bony backs. Said it wasn't until he was grown did he find out there was more to a chicken than just the back... grin

Bear lard makes the best pastry crust and tortillas, I'm sure it is great for gizzards also.

When I was a wee lad KFC sold fried chicken gizzards by the pint here in Oregon.

Haven't had any in about 50 years! Sure wish I could find some like they used to make!

I've eaten gizzards from domestic chickens & turkeys, 2 species of Grouse, plus Pheasant & Chukar. Liked them all.

Enter the wild turkey. The best liver I've ever eaten by far. And... the gizzard was so bad I had to spit it out. I've wondered what that damn bird had been eating.

Our boys, when home from college, work at a very high-end Southern Cuisine place downtown. In addition to making very, very good money, they enjoy the benefit of a very, very significant employee discount when they dine there. For my birthday next week they're taking me there for an extravagant lunch. We'll start with drinks (I'll have a martini since it's my birthday) and, typically, they'll order two for the table of every appetizer on the menu and everyone will have an entree. There will be a platter of very, very good chicken gizzards somewhere on the table and they will be all gone before we leave.

I like fried gizzards and fried livers. I don't eat them anymore. A good friend of mine had some broiler houses and I asked him if it was safe to eat the hormone and chemical fed chickens he raised. He said the meat is safe but he wouldn't recommend the innards..

Love them gizzards. We have a chain of convenience stores that sell them. I stop and buy a cup full about once a week.

Freshly killed wild turkey heart,liver,and gizzard grilled over oak coals are yummy.Very few chicken places offer fried gizzards anymore around here.
