Whitetail, mule deer, Sika deer , Moose , elk ,caribou, black bear ,bison, bighorn sheep,snow shoe hare, cottontails, groundhog, axis deer , gator , rattlesnake, huns , ruffed grouse , squirrel, pheasant , canada goose , turkey, various ducks, woodcock , doves and hogs. The sika and axis were tied for best of the best , followed by moose and elk. I like grouse but the rest of the birds were not all that great. Bear and Bighorn sheep would only be eaten by me again if I was near starvation, and mule are also close to being in that realm.......

Good afternoon, I hope the day's been kind to you and you're well.

The meat was indeed a bobcat and not a lynx, though we do have both around here.

It and the beaver as well as the caribou were at an annual game banquet which our fish, game and gun club used to put on. We'd get donations from members who were trappers and hunters and then have a catering company come in to cook the meal, along with all the side dishes and usually turkey and ham as well for the non-hunting folks who'd come as it was sort of one of the things to be seen at in the little town back in the day.

While it was a long time ago, I recall that the beaver was better than we thought it was going to be, but a wee bit muddy flavored for sure. We found out later from family who used to live up north that beaver should be boiled first to get as much fat out as possible and that'll get more of the muddy taste out.

The bobcat was really marginal as I recall. Tough and not a pleasant flavor, but edible if one was hungry I suppose?

Both the bobcat and beaver were done up as roasted chunks of meat then sliced if I'm recollecting right? I can't imagine trying to cook meat for 400 people and then having all sorts of carcasses show up, mostly frozen and mostly well taken care of before they were donated.... mostly... wink

Perhaps if one had a sample of either meat and took meticulous care of the carcass and then cooked it carefully paying attention to not drying it out or overcooking it there'd have been a better result?

That said, I do know that in our experience black bear can be all over the place regarding flavor. Some of them are downright rank, some taste "not right" and one vineyard raider was some of the best wild game meat we've ever eaten. It rivaled a fat Sitka Black Tail buck I killed in early August or maybe late July that was absolutely wonderful table fare.

The caribou was fine I thought and couldn't have told you it wasn't deer or elk. Going from a foggy old guy's memory I recall the texture as more similar to them and less course than moose.

Since making the list I recall eating bison a few times too, but I don't think any of the roasts we had were from the wild ones up north here in BC, so they weren't wild then and shouldn't be included.

Some long lists, but I don't recall seeing porcupine. Porkies are tasty and can be done many ways, as in sectioned like rabbit and braised along with the usual accompaniments. This is a tender and very tasty wild game meal.
