Yes. Smoked salmon. It turned out great.
1 C salt 2 C sugar 1 Gal H2O 90 minutes brine. Kudos to Sitka deer.
Form pellicle and smoke to preference. I used the Big Chief.

That does look good for sure. What type wood did you use?
Oh and how long in the brine? 90 minutes. (Edited the post above) I had always struggled with brine concentration vs time until artsy gave me the “secret”.
