Recently I read some hunters posting the best meat comes from bighorns. Is it anything like rack of lamb or Corsican sheep?
You folks who had fresh caribou and fresh bighorn, how do they compare?

Never had BigHorn, but Pronghorn backstrap will be hard to beat.

Fresh caribou is far away from being one of the top tasting wild meats. Never had bighorn but did eat fresh Dall sheep. It was pretty good as long as you didn’t overcook it.
My biggest fear is when I die my wife will sell my guns for what I told her they cost.

I read fresh bighorn is delicious, but that is as close as I can afford to get.

I have eaten the meat off of 3 bighorns, one ram and 2 ewes. It is some of the best game meat there is. Most people have not tried it and think it would be like domestic sheep but that is far from the truth. I enjoyed every piece I ever had. Mountain Goat is another story.

Its the best wild game I've had, but to me tastes nothing like lamb. Never had Corsican, so maybe that's closer.

Its the best wild game I've had, but to me tastes nothing like lamb. Never had Corsican, so maybe that's closer. Best wild game I've eaten is Ostrich. Dayom!

I have had meat from 4 rams. I have to agree it is the best north American wild game meat I've had.

Of the meat I ate...........Warthog would be first, elk second, and moose third.

We did a tasting on a NE BC hunt that included, elk, moose, Stone sheep and mountain goat backstrap. Goat, sheep, moose and elk in order preference.
Conduct is the best proof of character.

The meat off my one and only ram was excellent, not as good as the best elk IMHO, but excellent.
My wife, who likes elk and antelope but not deer was wild about it. We went through it to the exclusion of the other game in the freezer.

We have done many blind tastings with lots of different meats. Sheep never wins, caribou is always near the top. Too many caribou are shot in hot weather and mishandled. Mountain goat is usually ranked high. Black bear is the only meat people readily identify and often the favorite.
Sitka blacktails are outstanding and very different from any other deer.
Mark Begich, Joaquin Jackson, and Heller resistance... Three huge reasons to worry about the NRA.

Tastes differ, but Art's last statement I will second. It is hard to beat a nice fat August caribou ( well taken care of per Art) , but we rank Dall sheep and goat both above it. Black bear for us goes well down the list behind , in no particular order, pronghorn, elk, moose. Puma ain't bad either.
