I've been fin-atical most of my life. Holy fugg I'm crying! Left hand hoisting the back end of what used to be the hefty portion of a BIG pompano (?). lol! The face is priceless! A few last shots of the tuna gifted to me. Last 36 hours I've devoured maybe 3+ lbs. of raw. Wonder what my mercury count is. Based on the accepted scientific standards, my intake is probably exceeding the...hey look, a SQUIRREL! And yes, my girls do love their sashimi. And if I'm lying, I'm dying. Still haven't heard from the tuna bash invitees. Clock is a' tickin'... Ruby red loin, AKA maguro. Fatty toro, from the belly. Melts in your mouth like butter. The wife chopping fatty tuna belly meat ready to incorporate lots of fresh scallions. Ready to roll with rice and seaweed. Voila, homestyle sushi.

I saw on the tube a while back that raw tuna's texture is best if it's been frozen first. Is this just marketing to get us to only eat pre frozen sashimi?

There is some merit to that, but I think it relates more to making sure any parasites are dead due to freezing. I've had folks tell me that the very best sashimi is had soon after landing and killing. As in, hack off some bits while the heart is still pumping fresh. This is totally false. Much like high quality beef that benefits from dry aging, tuna is best served after being cooled down and resting for some time at low temperatures just above freezing, then bringing up to cool room temps and then serving. The meat takes some time to firm up before it's best. I'm no expert, but I know a thing or two about this stuff. I blame genetics and a decades old propensity for enjoying killing and eating raw fish flesh with a hint of shoyu and a whisper of wasabi. Cheers, bud.

As for raw fish and dogs. My old Bruno, rest his wonderful soul, would sit quietly as I was fixin' the albacore for the smoker. Between the two of us, there was a lot of tuna that never made it into the cabinet.

KG, great pics and write-up as usual. Almost make me sea sick just looking at the pics. Noticed the gearing on a bridge.... that's a cantilever bridge. Never worked on that one, but I've been on a few in Fl. and Long Island.

I'll take both. Hey paisano, I was surprised at the quality of blackfin, actually. Only been turned on to them in the last few years. As a relatively warm water flavor of tunoid, I figured them to be mushy and generally unworthy as far as table fare. I was wrong. Make no mistake, they're no bluefin, bigeye or yellowfin clone, but definitely hold their own in the world of tunoids. Much better IMNSHO than bonito, false albacore and skipjack. Cared for properly and served right, they're damned good eating. I just wish the ones I've hauled over the rail were like 5 times bigger than what they actually weighed...
