My buddy is a butcher. I have him mix it all up and smoke it. He has a much better home set up than most and can do a decent quantity a lot quicker than I can. And I know where it came from.

That’s where our 70/30 mix with pork butts comes in. In my experience straight venison ground doesn’t stick together in patties, grilled or skillet. Pure venison is even good in meatloaf but there’s the egg & breadcrumbs to hold it all together.

One more add-in we’ve used is bacon. Do 30% bacon to the grind and it’s awfully good. But bacon has apparently been hit by inflation and ends&pieces boxes don’t show up around here.

Oh, something else. I’ve always HEARD venison fat is a no-no in any otherwise meat dish. Seeings how I’ve become progressively more skeptical of this source of information I put that common knowledge to the test.

I shot the biggest bodied deer I’ve ever taken during muzzleloader season this year. 210 lbs. and fat. So while shootemette and I were processing I cut some small pieces of the ham with some very pretty white fat and dropped it unspiced in the frying pan. Meat was just fine so I tried the fat. No problem. No worse than a bite of beef fat. Was going to save the fat for grind but shootemette vetoed the idea. But next year if there’s plenty of acorns again I’ll do a couple pounds at least.

If I have enough antelope and elk in the freezer I keep enough deer for jerky and then give the rest away.

I used to do steaks roast and burger to give away but keep it simple now and everything gets ground and put in two pound bags. A lot less work for the slaves that way.

We back pack out our meat so we keep it simple. I keep the back straps, loins and the rest gets ground to burger which is what we use the most anyway
