Oh, something else. I’ve always HEARD venison fat is a no-no in any otherwise meat dish. Seeings how I’ve become progressively more skeptical of this source of information I put that common knowledge to the test.
I shot the biggest bodied deer I’ve ever taken during muzzleloader season this year. 210 lbs. and fat. So while shootemette and I were processing I cut some small pieces of the ham with some very pretty white fat and dropped it unspiced in the frying pan. Meat was just fine so I tried the fat. No problem. No worse than a bite of beef fat. Was going to save the fat for grind but shootemette vetoed the idea. But next year if there’s plenty of acorns again I’ll do a couple pounds at least. You definitely don't want to eat the fat if at all possible. If some gets in the ground, its no big deal. Deer fat is waxy. You can make candles out of it. I made the mistake many years ago of making deer ribs where there was a thin layer of fat between the layers of rib meat. It tasted great but about 5 minutes into eating it, I realized my mouth and lips were coated in wax.

Why are people mixing beef or pork to wild game?
For the record I usually just do basic cuts. Steaks, roasts, maybe a pound or two of stew meat, and burger.
I see zero reason to mix anything into my burger.
Plan on doing summer sausage this winter, probably breakfast sausage too. Have had my cutter do his sausage, mixed with inspected pork fat, but now I prefer to make my own by grinding either skin-on chicken or turkey thighs, about 1-1 with the venison. Spice is whatever the purpose calls for, say fennel seed for Italian. The poultry fat is really tasty stuff. Meatballs made with this mix are very good too. Got my second one back yesterday. 43lbs of almost bone-free meat (femur sections are in the roasts). Did a test run of burgers in a 400 degree oven this morning. A1+ stuff. Won’t be buying any of that crappy $5.99 burger this year. Next up is a pot roast using the sous vide.
What fresh Hell is this?

I grind most of mine these days, but use far less pork for sausage, or fatty beef with the burger. I usually kill 30+ (Crop Damage stuff for the local farmers/Game Wardens).
Don't really do much with the meat myself (except some backstraps... and chunks for the dogs).
I offer the deer to whoever, but don't get a lot of takers anymore... unless I will process... and I am kinda done with that.
Had a friend that made 1k pounds of "Slim Jims" every year and gifted away, but whiny deadbeats broke him of that chit also...
BUT... I like the way you think Steve...
You have good mix ratios and a great handle on the sausage.
I used to do tons of jerky, but anymore it is Ray and Shark 90%... and lots of fruits. You have that problem, too? Every year I usually have some excess fruit and tomatoes. I can't give them away unless I pick and deliver them. Not going to happen.

Rhoms Law IIRC Animals of same species and genus need larger body mass the further north or south to the poles in order to retain heat. Animals that are sub tropical or tropical of same type don't need large bodies to retain heat. In time they become subspecies of the overall genus they belong too. I probably fuuked that all up.
