they tasted pretty good - I need to go heavier on the vanilla and keep the torch moving … you have to make 2-3 passes or you scorch the sugar.

I used the American test kitchen method of Sous Vide to make them…. All in all they are pretty darn good.

Made the mistake of making it once for a special luncheon at work. About 2 seconds after I clued in that maybe it wasn’t best to be using a torch to finish it, the fire alarm went off and I had to go deal with the fire dept (automatic response).
