Anyone on welfare/unemployment etc has been getting extra $$'s over the past 3 years.

It's finally starting to dry up.

I love pie!

My m-I-l, bless her heart, cooked a roast by dropping it in a pot of boiling water with some onions.
To serve it, she took two forks and ripped it into shreds. It was like eating used, onion flavored, leather boot laces.
....but damn could that woman build a raisin pie!!

As a kid growing up, my favorite was Mom's coconut cream pie.
I even paid $65 for a top quality double boiler to produce my favorite pastry for my family.
Hours I spent, tenderly stirring a slowly thickening blob to fill with coconut and pour into a prepared pie crust!
💡!

1/2 C sugar
1/3 C AP flour
Blend flour and sugar together
3 egg yolks - retain the whites for meringue
2 C whole milk
Blend milk and egg yolks into flour and sugar in a microwave safe dish.
Microwave on high for 3 minutes - stir
Microwave on high for 2 minutes - stir
Continue microwaving in one minute increments and stirring until desired thickness is achieved.
Stir in 1/2 tsp vanilla
Add:
1 C shredded, sweetened coconut*
Pour into a baked pie crust
Make meringue with remaining egg whites
Bake in oven until meringue is nicely browned.

* - 1/3 C semisweet chocolate chips instead of coconut makes a scrumptious chocolate pie. 👍
