Agree.

No reason to ruin a great sausage and braising ah jus with complex ingredients.

Tried out a new recipe last night for shrimp chile rellenos and they were amazing! Found some poblano chiles at Winco(Oklahoma) that were huge. Sauteed some shallots, garlic and roasted tomatoes. Added medium shrimp cut in half with some salt and pepper. Roasted and peeled chiles, stuffed mix shrimp mixture then topped with monterey jack. Chipotle crema on top. DAMN GOOD!

I think I'll make this recipe this weekend, but sub the shrimp for chicken or steak.

Coupla nice porterhouse steaks, from the local farmers co-op.

Just Deb & I, so only cooked 1 & we split it. $18 & change a pound.

Those porterhouse are HUGE! And cooked perfectly I might add. Is that a little fresh ground horseradish too?

For me, Chile Rellenos is the standard by which all good Mexican food is judged!! My absolute favorite and that looks and sounds awesome! Congrats.

Pork butt on the Webber kettle today. Steady temps of 275° using mesquite and cherry. Sandwiches were great and leftovers will be for nachos during the Super Bowl.
