I just acquired a 1907, manufactured in 1908 & I'm trying to find out if Winchester offered them in different grades.
This particular gun has exceptionally well figured wood on the forearm, checkering on the grip & forearm & a cheek piece. The pistol grip flares towards the butt & it has a pressed steel, rather than bakelite(?) grip cap.
I've seen a couple of online photos of checkered guns, but none with a cheek piece.

Do i have something special, something very well home/custom made, or does my internet researching just suck?

A very nice example in a Deluxe configuration.
To try to answer your questions and be Honest Yes Winchester did offer Their Rifles in different grades, as the "Self Loading Rifles", with which you have in a Win. Model 1907
and in the standard 351 Cal. for that Model in a Deluxe Configuration; Checkered Stock, Pistol Grip Walnut Wood.

IMHO! I don't think what you have is original.

Here's why. Although nicely Done the checkering is close to Winchester's style but it varies enough to distinguish it's differences. On Both pieces of Wood the Butt Stock and the forearm
the lines per inch are off and look busy,(too close), and the wrong coarseness. Winchester was very consistent in their Checkering and Styles that they offered and both of your examples look Copied and some what similar yet different. The Forearm replicates the Letter "H" Style but it's starting points are different and leans toward the shorter Letter Style "G".
On the Butt stock behind the Pistol Grip, Winchester never had the two outlined points like you see here. To compare more accurately take a good look at more Winchester Checkering
offered by Winchester either on the Web search or Auction house examples. Although nicely Done and looks nice I don't believe it's Winchester Original.
The Wood Pistol Grip Flair is not Winchester as either is the grip cap style. The Monte Carlo replicated style cheek piece isn't Winchester either. Close but not Original.IMO!
John Henwood's Book (1995), "The Forgotten Winchesters 05, 07, and Model 1910 Self Loading Rifles. Describe a lot of what I'm saying in great details.

To Have one of these Models in a Factory Original Deluxe Version is Rare. You have a nice example.
Shoot it and Enjoy it, their a lot of fun.

Thanks for the very detailed reply. That appears to correlate with other information I've discovered today. I didn't consider the actual patern of the checkering but your 100% right. It doesn't match any other Winchester factory checkering of the period. It looks a lot like a later style that I'm seeing show up in the late 50s (best I can see)

Another gent suggested that the cheek piece reminded him a lot, of a Bishops Gunstock pattern. I've found several archived PDFs of their catalogs from the 60s, nothing earlier yet, & it does indeed look similar, but I'm only seeing bolt actions, Savage 99s & shotguns in the literature, so I can't say for certain. Also the catalogs aren't crystal clear, so it's impossible to make out the period photos of the checkering. There are no drawings of their patterns, point styles or border details unfortunately.

I'd never heard of Bishops until today, so I'm hoping someone in 24hr land can give me some pointers.

Your Welcome. Good Point. It does resemble a Bishop style cheek piece stock. The Monte Carlo style cheek piece was pretty popular in the 60's and into the 70's.
For Conversation sake I never have seen a Cheek Piece on a Winchester Model 1907! Factory Deluxe and nice extra Fined 07's but never a Cheek Piece.
Not even in Pictures.
