I've really began to think about this over the last 4 or 5 years. Most of the knives I'm using are S30V, S35VN, etc...better to catch them early than let to much edge go. I like the scandi grinds on hard use knives but I really began to notice how much steel contact was needed when sharpening them. Yeah, the angle is built in but it's a lot of steel on the stone. Lot's of variety in grinds and they'll all work but no matter how you look at it, it takes less time to remove less metal...thickness matters.
