Yup that's a great lookin marinade Greg posted.
Wife says she uses ancho and sometimes chipotle as well. Doesn't use achiote.
She likes to slightly dry toast the chiles instead of cooking in oil. Careful not to burn.
Always taste the reserve soaking liquid before using, if bitter tasting toss and use water or stock for blending.

Thanks for the recipe Greg it was dammed good. Admittedly I misread the recipe and added 1 1/2tsp clove rather than the 1/4tsp, so I added more of the other ingredients to offset. That being said I’ll make this again in the future.
