For years Rotel and Velveeta has been my favorite cheese dip. In the last couple of years I have come to not like it. Not sure if the ingredients has changed or my taste. I also use Rotel in other things, like stews and sometimes added into spaghetti sauce. Lately the Rotel does not taste good in those. I think that they are using tomato's that are too green, but that is just a guess. I do make sure and buy the cans that says original. Been thinking on making something similar using store bought diced tomato's and diced Jalapeno's. On line recipes for this is maybe not available, when I do a search, it always either sends me to a recipe using home canned tomato's, or Just a recipe featuring Rotel. I am going to try with home grown tomato's and Jalapeno's but they are a long way off. Any ideas or recipes would be appreciated. miles

I don't have the nerve to make this but a friend makes some great cheese dip for parties. She browns a pound of breakfast sausage and adds a pound or two of Velveeta, without draining the sausage fat!
We were all woofing it down when she told us the recipe, we paused a little and looked at each other, but the bowl is always emptied quickly.

Try Walmart Great Value "Fire Roasted Diced Tomatoes w/Green Chilis". Nice smoky aroma and enough bite to come through added ingredients, I use them in soups. Never cared for Rotel.
After the first shot the rest are just noise.

Type in rotel copycat and even more recipes for it. There are even videos on how to make it step by step.

HEB's fire roasted "Rotel" is very good. Same for Muir Glenn and Hatch.
Conduct is the best proof of character.

I have noticed that Velveeta has changed for the worse. My standard for toasted cheese has always been Velveeta, but lately, it has just not tasted very good to me. Could be the cancer, but if someone else is noticing it, something has changed. I think I may try straight provolone and see how that works. Thanks for the alert.
