I grew up with a boiled dinner with corn beef, potatoes, carrots, cabbage and onions. It was pretty good. My part Irish wife introduced me to a baked corn beef, roasted veggies and cut a cabbage into wedges and bake over pan of Guinness. Make a reduction of balsamic vinegar for a sauce. Better than boiled.
After the first shot the rest are just noise.

It really sneaked up on me. If I hadn't read this, I'd not have known tomorrow is St. Patty's Day. I might have to go get some corned beef and rye bread tomorrow, and make it. I like making sandwiches out of it with mustard.

In the crockpot now. I cook with veggies and then throw them all away just to pull so salt out. Leftovers for ruebens tomorrow.
