Try grape seed oil . Neighbor swears by it for cooking. It has a relatively high flashpoint too. I give up on the olive oil and started using avocado oil. Yeah....but olive oil is an ingredient too... I was making chimichurri. Use beef fat.....if you have any.

We would buy the twin packs at about three quarts I believe but it would turn rancid before we could use it all.

I use both olive oil or grapeseed(high heat) accordingly, keeps the cast iron in good shape too.

Don't use the extra virgin if you be sautéing. Generally Avocado or olive oil and butter if sautéed. Will fry with peanut. Sometimes use grapeseed. Occasionally safflower oil.

And he is talking about Chimichurri that is from a real South American beef area and for real men. It is not some steers or queers California expat who claims he is from Montana and uses some special homo avocado oil.

Liked the bacon grease or lard ideas. Makes great dutch oven potatoes and tamales respectively.
Was going to add sardine or smoked oyster drippings. Probably have some of that up in that country and I suspect depending on what you are cooking the latter might taste pretty good for sure! Cottonseed oil , IIRC.
Gonna have to experiment myself sometime when the wife is out of town on a girly girl trip with her sister!

Costco is the best place to get Olive Oil - the Kirkland brand is the real deal, not some sunflower seed oil mix other stores try to pass off.

Yup I agree. Kirkland is a better bet than the imported stuff that has been diluted with something other than pure olive oil.

It’s all good but I’ve gone back to lard. Brings back tastes from youth and sure is the ticket when it comes to doing fish. Rendered fall bear fat for pastries, nothing is better. Osky

Costco’s is really good. Watched a review on YT and their regular, not the organic, won the day over a bunch of others.
I also use ghee (American) that I get from Amazon instead of butter for stuff like scrambled eggs and in the sous vide and for popping corn. We save our bacon fat too.
What fresh Hell is this?
