I think Keith is catching the little red pine squirrels, though I can be sure as we have Red Fox squirrels in a number of locales in MT...and they are non-native...and non-protected grin

That shouldn't be hard to manage, we've got lots of fox squirrels where I hunt, next time I go out I'll try to whack one or two.

Are they better cooked right away, or do you soak them in something overnight?

Go fresh. No need to soak. If you freeze them put them in a plastic bag (usually I do this after quartering them with a cleave or hand ax) with a lot of water so that you have, effectively a block of ice with a squirrel in the middle.

I wouldn't soak a cookie in butter milk. I don't know why people do that with anything. But seriously straight from the woods to the pan or the grill is great.

NO!!!! shocked

BrentD was right on. I piece mine up, put them in a sandwich bag, fill it full of water and freeze it.
Tastes like fresh.

When Im ready to cook I parboil the pieces with a little onion for about 5-6 minutes, roll in flour, S&P and pan fry in butter.....medium heat till golden brown. Make gravy out of the junk left in the pan if you like...
Squirrel is simple, easy to prepare and the BEST....

k thanks - I'll give it a try.

I love rabbit so I'm hoping it'll be a bit like it

Mom never would let me bring the ones I shot in the house, Either gramps or a neighbor came buy and got the meat so I may have been missing out - don't know just yet.

Rabbit tastes like old goat liver in comparison to a good fox squirrel

And I think squirrel tastes like rabbit, but with a ton more flavor to it....
