Tried my hand at making Corn Pudding last night.
It tastes great, but it seperated. Custard on top, and corn on the bottom. Is this normal, or did I do something wrong?

No help here as I have never tried it, but I'll bet one of the better cooks than me (which is most here) will be along shortly to give you an answer.

Yea,,, I'm sure someone here knows.
It tastes great and I'll make it again, but it doesn't look like pix I've seen on the interweb.

FWIW,,, I used this recipi.

This corn pudding recipe works well. I have been known to add a finely chopped jalepeno pepper or two for a little kick of flavour when serving it as BBQ meal:


1 Stick Butter

1 Cup Diced Onion

1 tsp Minced Garlic

4 Eggs

4 Cups Fresh or Frozen Corn

1 Cup Cream

1 Cup Cheddar Cheese

2 Tbs Corn Meal

2 Tbs Sugar (Optional)

1 tsp Salt

1 tsp Black Pepper


Preparation

1.In a small pan over medium-high heat melt the butter and gently saute the onions and garlic until soft

2.In a large mixing bowl beat the eggs until frothy

3.Add the butter mixture along with all the remaining ingredients and mix well

4.Pour into a buttered 9 inch square casserole or a similar sized oven-safe dish

5.Bake at 375 degrees until center is just set (about 25-40 minutes)

Guess I didn't word that right.

I like the I recipe I used just fine.

What I want to know is if it should seperate like it did.

Like I said, the pix I've seen didn't seem to be seperated.

I mixed it really well before baking, but it's definatly custard on top, and corn on the bottom. That just doesn't seem right to me, but I don't know for sure. That's why I'm asking.

Wonder if using corn starch for thickening had any thing to do with it?

It was excellent, came out a lot better than my beef ribs(tried 'em in the crock pot, I'm going back to the smoker next time)
