Does anybody have a favorite recipe for whole elk tenderloin in the oven? I've always done it on the grill or in the Pit Barrel.

Like you,have always done ours on the grill . Wrap in bacon and cook `til med rare .

I preheat the oven to 400. Roll the loin in sea salt and pepper then wear quickly in a smoking hot cast iron skillet. Put it in the oven on a cookie sheet and cover with foil, cook for 15 minutes. Pull it out and melt butter on it and let it sit for 10 minutes. Slice off medallions and serve with sautéed onions and mushrooms with a salad and a side of asparagus.

PS It will be bleeding rare and that’s how I like it but you can adjust your oven time to suit your tastes.

I’ve always heard Elk meat is really good. We have a few on our deer lease. I’ve never felt the need to shoot one. No season on them here.
