I know the ones with the long, cylindrical, hand-held fuel bottle have been around for ages. Is that pretty much the only choice of a go-to, everyday, run-of-the-mill torch? Won't be soldering or welding.

I bought two pitchforks in the last year.
One 5 tine and one that must be about 10(?).
They are both pretty decent, can't remember the brand. Not cheap, around $50 apiece if I remember correctly.
Bought a nice aftermarket mini torch head as well.
I'm gonna go check and see what make/model.

I like mine for annealing brass. No idea what brand it is. Bought it at the local hardware, guns, fishing poles, and reloading store.
It fits on Coleman fuel bottles as easily as the more expensive tall, skinny, blue bottles.
I've had a Victor torch for 30 years.

I have one that came from the oitdoors/camping section in Wal-Mart.
$10 or so, my daughter saw me look at it and have it to me for Christmas.
Use it to start fires mostly.
Pressed it into service when I needed to solder some pipe and my good one

Get a turbo torch. This is the best, use with Mapp gas, will silver solder 1” copper pipe

I messed around for 30 years with the non-trigger torch heads trying to get just the right amount of gas output so I could ignite it with matches or a lighter. Too little it doesn't light, too much blows out the flame. Granted, I only pulled the thing out a couple times a year.
A couple years ago was watching some videos on how to make great steaks and ran across a channel called Sous Vide Everything, and he would experiment with searing steaks on various things. Inspired me to buy a Bernzomatic TS 8000 trigger head. Just pull the trigger and you're rolling. Wow, wish I'd have done that years ago!
Last Christmas Eve, blew a super single tire on the semi on the way home (company truck) and wadded up the mudflap pretty good. DIdn't feel like having to make an unnecessary trip to a garage to have it bent back, so I took it home and played with my TS 8000 using regular propane and a sledge hammer. Did the job pretty good! Took a little bit to get the metal glowing, but it worked.
Long gone, I had a refillable propane torch, 25 cents a fill back then.
I have a Bernzomatic T8000 auto start that will also use MAPP gas for a lot more heat. It works great. I watched a comparison with their T4000 and the 8000 put out double the heat using propane. With MAPP, it can be used for light brazing. Lifetime warranty, too.
For refilling bottles, I have one of these $10 gizmos that I've been using for 30+ years. There are better ones out there now but this one has worked fine all these years and has paid for itself MANY times over.
