Birria de chivo es traditional.

In a fresh torta is killer. Then you can get crazy and make it ahogada style.

Looks real good. I've been messing around with Korean barbecue and Jamaican jerk recipes. The Korean marinade uses pureed Asian pear, has enzymes that tenderize the meat. It works real well.

The jerk mix uses lime juice, it's really good on pork. I'm gonna try it on some baby back ribs.

I was in Torreon Mexico earlier this month and had birria de chivo a couple times. Damn good eats!

If I can get some chivo next time I will use that instead. Pretty sure I can find it at one of the local meat markets.

yup worked for a guy when I was young who raised hundreds of them. He'd send me out to chase down all the newborn kids to bring back to the main pens. Damn, but I could run back then.

I put a link to the recipe, the only thing I did differently was using 6 cups of chicken broth and 2 cups of red wine instead of water.
