Kinda stumbled into a party tonight.

The food was cooked by a Nicaraguan fellow.

Pork ribs and beef.


The pork ribs were marinated in a sauce that had achiote paste.


Hole e schit was that good.

The ribs were marinated in achiote paste, garlic, onion, bitter orange, and a little vinegar.


When we pulled them off we gave em some lime juice.

Oh....we also had some shrimp ceviche.

I’m not familiar with Achiote paste. No sauce or just dry?

The achiote paste was applied during the 24 hour marinade process.

The ribs were not sauced or anything during the cook.

It was cooked on a pellet grill.

I have had guys at work from all over the world invite me to eat with them

Try to smooze the Inspector so he passes your work.
Some of these guys can really cook and with not much to work with.
Sounds like you had some GREAT food

I’ve seen it, but never have used anchiote paste. Sounds good.

The achiote was on pork ribs.

The beef was not done with achiote. He said it never was. Only pork.

The last Nicaraguan I et, was very stringy and gamey - rank, in fact. One bite and I had to throw it out. Never again.

Caught a Mahi mahi while in Mexico. Hotel made Ceviche outta part of it. Outstanding.

Clam ceviche is a fave.

WDFW has had clams and crab shut down for ever out here. Unless of course your a tribal fella.

Shrimp & Octopus from a Mexican Roach Coach (Catering Truck) was the Best Ceviche I have ever had.
The Crap and Octopus was second from the same guy
You can not beat good Ceviche.
I have had some bad stuff as well.

grin grin Geoduck ceviche is actually really good. You just have to chop up the dongs into tiny chunks.

Achiote paste is good in lots of stuff....

Really good too with chicken either as a marinade or a basting type application.

I googled the achiote whatever, still don't know what it is.

Holy Sheeeyat! While in the USAF in the 1980’s we had some great
Mongolian BBQ. Mather AFB O’Club & Anderson AFB O’Club put on one hell of a spread!!!!
