You really need two fryers, my Cajun fryer takes 2+ gal of oil. The one I made from a 24" disc blade takes 1qt of oil. We always use the disc one unless I'm cooking for 5 or more people. Just place whatever you cook first on the outside of the the SS ring and it drains the excess oil and the food stays warm.
I just use my big dutch oven on a propane burner.

My wife is looking at them now. We are building a covered outdoor kitchen and she is getting ideas for things to include. Prices for building supplies have really put a crimp on the project. Pavers have doubled in price.

I buy the cheap Basspro fish fryer kit and use the burner with a Disc like KW posted. Uses less oil and is more versatile. I’ll fry a batch of fish and potatoes in it one night and the next I’ll slap a dollop of Manteca lard on it and make elk or deer fajitas with fried corn tortillas.

Kaywoodie's setup looks like the one my son built. It's a copy of the Bayou Classic I think. Uses propane and holds about 4 gal. of oil. Fries quick and well. Just have to watch your temp. You can fry a lot at one time. For just the wife and myself I use an old furnace for melting lead and an old pot full of oil to fry enough for us to eat. Keep it at 350* and they swim pretty fast.

Here’s my next one. Been cleaning 125 years of ‘patina’ off of it

I will just cradle it in an older burner stand for a peanut boiler I had.

Look at the Bayou Classic. I have the 4 gallon double basket. My son bought the 2 gallon single basket.
We use the 2 gallon more than the big one. We can cook comfortably for 6 to 8 quickly doing Catfish filets, fry's, and hush puppies quickly. We use the big fryer with larger crowds. We like both, just have to decide how big of crowd you will be cooking for.
I use one of these sitting on top of a big turkey fryer propane burner:

This isn't the burner I've got but mine's similar, get one that puts out a LOT of BTU's:

Propane Burner

Get one of the infrared thermometer guns. Since I bought one of those I don't mess around with a thermometer in the oil, just check it with the gun. It's 1000X better.

All you need is a burner, a frame to hold it, and a tank. You don’t need anything fancy or expensive. Academy sells one for about 40 bucks. Cooked a buttload of fish on it yesterday.

I use a cast iron pot on either the side burner of my home grill or a cheap basspro fryer stand.

The real one, made in USA.

Not the Chinah made one. Cajun king or something.

Up front it’ll cost. $350-400.

Over time you’ll be money ahead.

Cooking with it is a breeze.

Get that dude hot (350*) amd roll on.

Almost no recovery time like a kettle / pot fryer. No temp swings.

Plus the 2 basket model lets you run 2 things at once.

Oil lasts awhile. Just add some, crumbs stay on bottom.

I have a 2 burner propane rig that is a little over knee high. Use a cast iron dutch oven to cook in. Have used 2 on it when cooking for a crowd. The cast iron and powerful burner keeps the temp even for deep frying.

I think that’s the model I’ve got.

It’s not big enough for a turkey though.

That takes one size bigger ( if indeed i do have the 6gl. Model)

Maybe i have a 2 basket 4.5 gal model. I’ll have to check.

I buy the cheapest oil Sams club has. Liquid shortening. Peanut is for the pinky in the air crowd.

They're all good,but I'll second the discada. That is, by far the most useful outdoor cooking utensil I know of.

Sounds like a small amount...Cutting each filet into sized chunks for fish & chip made a huge pile. Of course we also had 31 fresh Dungeons crabs we caught in the morning, homemade chowder made with chopped up razor clams, and 2 doz oysters I did on the grill with butter, white wine, and garlic.

We finished off the meal with 2 homemade apple pies, ice cream and lots and lots of beer and booze.

Nobody goes away hungry from a Beaver house party, ever...Unless you’re a vegetarian - then life is gonna suck for you.

when i'm really cranking out the fried food for parties, i use 2 electric fry daddys and a heavy pot about 2 gallons on the propane. fish in the little ones and french fries and onion rings in the bigger one. also use a turkey fryer for wings and turkey. peanut oil only for me.

Good plan...I was under gunned with one fryer.

Thankfully, we had a lot of food going off at the same time. Nobody minded having batches of fish & chip coming out every 7 minutes or so.

Just use your turkey burner stand. Swap out that BS jet burner for a banjo $12. And get to work. Dutch oven, disk, skillet. Depending on volume
I just use a pot on a propane burner. Have a 6 or 8 quart pot for just frying up a couple pounds and several others up to 15 gallons or so for bigger cooks.

Get a decent thermometer for the oil.
I want a cajun fryer like Dave has because the oil lasts so much longer...apparently.

Those fancy cookers work if you want to feed just your friends. If you want to feed family, you might need a better setup, lol.
