WI, bird numbers on the riverbottom are as low as I have ever seen them. At least on our place anyway. I hear some guys have birds but can't figure out why we don't.

We walked the jungle yesterday morning. It's a 9 year old sandbar that has grown in quite nicely with all kinds of vegetation. Flushed one young rooster and Rancho got him.





Bird numbers 3-4 miles away on a spring fed creek bottom are below normal but there are a few around. I got one bird and Rancho took two. Between the two of us 4 birds in a day and a half. 4 birds in 4 shots(brag...), no dog and that really makes flushing them much harder. Had a couple roosters take off behind me yesterday...

Oh boy, here we go again.

Sam’s slackin’, so I’ll chime in.

We fry it same as chicken. Then fill a cake pan 1/2 full of rice. Toss the pheasant on top and cover the works in cream of chicken/mushroom soup. Bake for a while.

Even better if it’s grouse, IMHO.

First you gotta get the feathers off. Grab the pheasant by the head in one hand, shove two fingers of the other hand between the neck and breast, then pull the bird in half. You will end up with the head, neck, back and legs in one hand, and the breast/wings in the other hand.

Clip off the wings at the first joint and remove the lower leg from the drum sticks then separate the thighs from the back. And I cut the breast in half along the keel bone.

All that's left to do is toss all the refuse, wings, feathers, guts and lower legs. It takes a whole lot longer to type it out than to do it. Each bird takes about a minute to dress.

I stir a bit of Worcestershire, some ground sage, a bit of salt and pepper into a cup or so of flour. Roll the pheasant pieces through the seasoned flour, and drop them in a cast iron frying pan with 1/4 inch of hot oil.

Don't over cook. It does not take long for the half breasts to cook through.

The only thing better, is fresh killed grouse rolled in the same mix and cooked over a camp fire.
