My one and only claim to culinary fame would be a nice beef steak grilled to perfection.


Let it hit room temp and depending on the cut, 5-15 minutes on grill.
Recipes are always good..
Fried bologna sammiches.
brisket / beans
Sweet tea

4lbs of cane sugar, gallon of hot tap water

Stir into a sugar tornado

Chill before serving


That's all I got

I’m a Career Chef of almost 30 years in the business. Big City fine dining and white table clothes to Gastro Pub bar n grill. I have thought on this before your query. Knee jerk response - Meat Lasagna. Second, chicken wings (i smoke mine, whole. For five restaurants and counting. About 45 40lb cases a week. And just beat Buffalo Wild Wings at their own game in a big competition. Took double blue ribbons!). Third, Cuban sandwich. Fhuccck off Bobby. I could go on.

And hats off to that. I neglected to mention that calling “Brisket” is the ultimate hard-ball. I love that schitt, to eat. I’ve dabbled In smoking it on my own. I have friends from Texas who embarrass me. Best for a man to know his limitations.

trim it first, i pretty much use the same method in these videos. i do use garlic powder, with the salt and pepper.

I watched an Iron Chef America years ago.

Bobby Flay was the iron chef.

Three guys from a southwestern state wearing cowboy hats took him on.

When the 15 minute times were announced ( the competition lasted an hour) the three guys would huddle up and take a shot of tequila.

They were noted as the only contestants to utilize canned hominy in their signature dish!

They beat Bobby flay......in kitchen stadium. It was most impressive.

To be clear, I'm not saying anything bad about Mr. Harry's wings. But from what I've seen a Career Chef beating Buffalo Wild Wings would be about like me beating a class of slow 7th graders on a math test. grin

Christmas morning, asked the daughter what she wanted... uhhh, duhhh, biscuits and gravy... and taco dinner later.

krp, that looks downright tasty. Loves me some biscuits and gravy. Matter of fact, gravy goes good on lots of stuff. That taco looks good too.

Here's some brisket I made a while back with some charro beans, baked potato and pickled jalapenos.
