I'm looking to scope a japan made Weatherby mark V deluxe in .300 wby mag with a 26" barrel and I'm wanting some advice on what scope to put on it. I'm wanting a scope with a extended eye relief due to recoil.

I don't know about "extended" but M8 6x42's are a shade over 4".
The discontinued, but still available 1" Hawke Endurance LER scopes have 4 1/2" and are priced very nicely from Cameraland. I've got a couple, but can't comment on the long-term reliability, only that they were sighted in without issue or drama. For $100-$200, I figured they were worth a shot. Illuminated too. The new 30mm models run about 4".

Leupolds often have good ER, if you're not scared off by all the trouble being reported, but it often varies with magnification changes, sometimes a good bit. Not an issue if a fixed power would work.

In general, 3.5" seems to be the rule for most scopes now at all price levels. More is definitely the exception, at least among the many I've perused of late.
I've got a Nikon Slug Hunter on my slug gun. 5" eye relief and it takes a pounding. This Encore kicks worst that anything I've ever shot when using a 3" magnum slug. I did have a reticle get screwed up one time. I sent it back to Nikon and they replaced it.

If you are looking for a few more "X's", the Leupold VX-R 4x12x40 has 3.7" relief on 12X, and, 4.9" relief on 4X. I have one on a .300H&H. Zero issues with getting behind it, or worrying about getting scope bit.
The Tract Toric and Turion both have 4" of eye relief. I put a Toric on my 30-06 NULA.

How do you like the tract scope what does it compare to?
I've got a NIB Cabela's Outfitter 3-10x40 EXT, that has 4" of ER, I could part with.

Another vote for Leupolds. They tend to have a bit more eye relief than most other brands.

An Encore with the 20" slug barrel is one of the most violent recoils I have ever felt. You know its bad when you squeeze the trigger the first time, get kicked so hard you know you didn't have the rifle snugged into the shoulder, so you do it again and realize its the gun not you.
Meopta 3-9x40 should be about 4”. I saw some demo specials from Doug over at Cameraland recently for a good price.
