I'd like to fly in this summer and take my boy on a real fishing trip. The wife will be tagging along and we'll probably take her on a separate sightseeing boat trip. I'd like to do river wade in fishing but I'm not averse to a boat trip. Living in the southeast, there is plenty of opportunity for the latter, but Gulf Stream fishing where the 1st mate does everything for you is just kind of boring to be honest. A high success rate is my main goal...my kid gets bored pretty quick if we arent catching anything,

Any recommendations for a good guide service or lodge? Preferably the latter where accommodations are included but if its close to Juneau or Anchorage, or there are ample nearby hotel accommodations I'd be down for it. I'd like to keep my travel costs down so something thats easily accessible from a major airport would be ideal.

Maybe I'm dreaming but I'd like to keep the actual cost for the lodge or guide service to $300-$800 per person per day....but I'm not averse to a bit more if lodging and such are included, or if you get a cool trip on a bush plane, cook you some of your salmon (we'll mostly do catch and release) etc. I really need something thats 95% pay and play, takes care of all licensing, provides waders and gear etc.

Sounds like Kenai River Sockeye salmon fishing is what you want. Time it right and you'll be catching fish faster and furious.
Lots of lodges in the area that will take you on the river and help you get started, plus can arrange fly out or saltwater trips if you wanted.
