Left over mashed potato quesadillas.

We just take a little bacon grease and a tennis ball size scoop of mashed potatoes in a frying pan. Mash down and crisp both sides. Works for me.

Shepard's pie fan here you can use lots of other leftovers in it too.

Potato candy.

About a cup of mashed potatoes,
Mix with powdered (10x) sugar until it becomes a stiff dough. Will take several cups.
Roll it to less than 1/4" thick.
Spread a layer of peanut butter about as thick as the dough.
Roll it up tight.
Slice in 1/4" thick pieces for serving.
Have milk or coffee handy. It's sweet and rich. Easy to choke on.

This was a staple treat as a kid.

Mom's potato cakes were just fried mashed potato patties.
A way to heat them before microwaves. Not that great really


I have seen recipes with chives, cheese, all kind of goodies.
Probably better than Moms.

Mixed in the beagles food.

Reheated in a skillet and mixed with a fried egg or three...

Can’t even relate, as we ‘never’ have leftover mashed potatoes.

My mom used to make potato cakes. She would pat them out. Dust both sides with flour and brown on a hot griddle.

They also make a good thickener/binder for things like gravy and meatloaf.

I worked with some guys that would fry corn tortillas, folded in half, with mashed potatoes or refried beans in the middle. It was awesome, and we were all cold and tired from working long hours on our feet. They fed anyone who was hungry, after a shift.

Been doing the bean version ever since, but completely forgot about the mashed taters!
