About a cup of mashed potatoes, Mix with powdered (10x) sugar until it becomes a stiff dough. Will take several cups. Roll it to less than 1/4" thick. Spread a layer of peanut butter about as thick as the dough. Roll it up tight. Slice in 1/4" thick pieces for serving. Have milk or coffee handy. It's sweet and rich. Easy to choke on.

I have seen recipes with chives, cheese, all kind of goodies. Probably better than Moms.
I worked with some guys that would fry corn tortillas, folded in half, with mashed potatoes or refried beans in the middle. It was awesome, and we were all cold and tired from working long hours on our feet. They fed anyone who was hungry, after a shift.
Been doing the bean version ever since, but completely forgot about the mashed taters!
