Took ours over to the barbeque place to get it smoked, and will pick it up tomorrow evening. I could have done it, but they do an incredible job.
Cooked one on the pellet grill yesterday.
Got ours in the oven now. Eat about 7:30 tonight.

It fits my daughter’s and her bf’s schedule.
Putting mine on the smoker tomorrow. Mix sausage, applea, and onions; stuffing in the body cavity. Smoke about 4 hours, foil up up and go about another 4 or 5 hours.
I plan to do a bourbon brine with mine beginning tomorrow and then spatchcock grill it with a good rub all over.
In the brine tonight. Will get a compound butter under the skin tomorrow and then to the smoker on Thursday.
In the brine weds Morin then out early as all get out on ... Thursday ... to get the skin rite....
