Easy way. Slice your onions... separate rings. Mix you're favorite pancake batter thick. Dip,deep fry, enjoy. We do button mushrooms and [bleep] the same way.

Don't do them often, only with fish fry and use the same batter. Have to drop them in grease separate or its a mess.

Bake them in the oven with your "fried chicken"
one egg, 3 tablespoons of oil, teaspoon of salt
1/2 cup of milk and one of cream or all milk, 1/2 cup of corn meal and flour to thicken. Add more corn meal at start if you really like then crunchy.
Good for onion rings and I have used it with potato
wedges. Either are good.

Every time I think about trying to make homemade onion rings, I think about how good they usually are at Sonic, and never bother.
I swear I believe Sonic mixes a good shot of vanilla cake mix or something like it in their batter. There is a sweet, vanilla taste in there that I don't think comes from the onion itself. Other people may not like them but I have a huge sweet tooth and love those onion rings.
Their tater tots are great too, unless they fry them too long.
Tater tots are more often under cooked.
i use flour, egg (separated) , milk, salt and veg oil and just a wee little bit of baking powder. mix real good to a pancake consistency. i usually only use big vidalias in season and fry them in peanut oil.
I use large white onions cut in 3/4 slices . A good beer batter that you would use on fish.
3 to 4 inches of vegetable or lard in a large pan at 375
Pull out when golden
For a variation
When you separate your onion slices , match the first ring with the 3rd ring ,2nd with 4th , and so on
Fill the gap with strips of your favorite cheese
Add a couple or 3 toothpicks to hold everything in place .
Once they have been dipped in the batter pull out the toothpics and fry till golden
Lot of fast food places batter them in ice cream mix.
I shake in flour. Then egg wash in egg and buttermilk. Then coat in seasoned corn meal mix.
